Ingredients:

500 g chicken breast or thighs (boneless), cut into cubes

1 medium onion, finely chopped

2 garlic cloves, minced

200 ml cooking cream (heavy cream or single cream)

1 heaping tablespoon curry powder

1 teaspoon turmeric (optional)

100 ml chicken broth or water

Olive oil

Salt and pepper, to taste

White rice or basmati rice (for serving)
Instructions:

Brown the chicken:
Heat a little olive oil in a pan over medium heat. Season the chicken cubes with salt and pepper, then sauté until golden on all sides. Remove and set aside. -
Prepare the sofrito (base):
In the same pan, add a bit more oil if needed. Sauté the chopped onion and minced garlic until soft and fragrant. -
Add spices:
Return the chicken to the pan. Stir in the curry powder (and turmeric, if using) until the chicken is well coated. -
Make it creamy:
Pour in the cooking cream and chicken broth. Mix well and let simmer for 10–12 minutes until the sauce thickens slightly. -
Season:
Taste and adjust with more salt or pepper if needed. -
Serve:
Serve hot with freshly cooked white or basmati rice.
