🍪 Crispy and Chewy Homemade Cookies
Ingredients (makes about 30–32 cookies, 30 g each):

400 g (3 1/4 cups) cake flour or all-purpose flour

250 g (1 cup + 2 tbsp) unsalted butter, at room temperature

220 g (1 cup) light brown sugar

110 g (1/2 cup) white sugar

2 medium eggs

1 extra egg yolk
-
10 g (2 tsp) vanilla extract
-
5 g (1 tsp) baking soda

3 g (1/2 tsp) fine salt

330 g (2 cups) chopped chocolate or chocolate chips

Optional: 100–120 g (3.5–4 oz) chopped walnuts or other nuts
Instructions:

Cream the butter with both sugars for 3–5 minutes until light and fluffy.

Add the eggs and extra yolk one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, sift together the flour, baking soda, and salt. Gradually add to the butter mixture and mix just until combined.

Fold in the chocolate chips and optional nuts.

Divide the dough into 30 g portions, shape into balls, and place on a baking tray.

Chill the dough in the fridge for at least 1 hour (or freeze if baking later).

Preheat oven to 180°C (350°F), bake for 10–11 minutes (no fan, top and bottom heat).

Let cookies rest on the tray for 5 minutes, then transfer to a wire rack to cool completely.
