Ingredients:

  • 600 g (1.3 lbs) beef chunks (chuck or shank)

  • 1 large onion

  • 2 garlic cloves

  • 1 carrot

  • 200 ml (¾ cup) red wine

  • 200 ml (¾ cup) beef broth

  • 1 bay leaf

  • Thyme to taste

  • 2 tbsp flour

  • Olive oil

  • Salt and black pepper

Instructions:

  1. Season the beef with salt and pepper. Lightly coat with flour. Brown in olive oil over medium-high heat, then set aside.

  2. In the same pot, sauté the chopped onion, garlic, and carrot until soft.

  3. Return the beef to the pot. Pour in the red wine and let it reduce for 5 minutes.

  4. Add the broth, bay leaf, and thyme. Cover and simmer over low heat for 1.5 to 2 hours, or until the beef is tender and the sauce thickens.

  5. Taste and adjust seasoning. Serve with rice, mashed potatoes, or crusty bread.
