Prepare a juicy and tender oven-roasted pork loin topped with a homemade apple and caramelized onion sauce that adds sweetness and depth of flavor. Ingredients:

  • 1 kg pork loin

  • 2 apples

  • 2 onions

  • 2 tablespoons brown sugar

  • 1 cup (250 ml) chicken broth

  • 2 tablespoons butter

  • Olive oil

  • Salt and pepper


Instructions:

  1. Season and Sear the Pork:
    Season the pork loin with salt and pepper. In a hot pan with a bit of olive oil, sear the meat on all sides until golden brown. Set aside.

  2. Caramelize the Onions:
    In the same pan, melt the butter and add the thinly sliced onions. Cook over low heat with the brown sugar until soft and caramelized (about 10–15 minutes).

  3. Add the Apples:
    Peel, core, and chop the apples. Add them to the pan with the onions and cook for 5 more minutes until slightly softened.

  4. Roast in the Oven:
    Place the pork loin in a baking dish. Pour the apple-onion mixture around it, then add the chicken broth. Roast at 180°C (350°F) for 40–50 minutes, or until the pork is cooked through and tender.
