Pork Loin in Red Wine Sauce: Easy and Delicious Recipe to Impress

Ingredients

  • 1 kg pork loin (whole or medallions)

  • 2 large onions, sliced

  • 3 garlic cloves, chopped

  • 2 cups good quality red wine

  • 1 cup beef broth or water

  • 2 tablespoons mustard (optional, for extra flavor)

  • 1 sprig rosemary (optional)

  • 1 bay leaf

  • 2 tablespoons flour (to thicken the sauce)

  • Extra virgin olive oil

  • Salt and pepper to taste

Preparation

  1. Sear the pork loin
    Season the pork with salt and pepper. Heat olive oil in a large pan or casserole and brown the pork on all sides. Remove and set aside.

  2. Make the sofrito
    In the same pan, add a little more oil if needed and sauté the onions and garlic until soft and translucent.

  3. Add the flour
    Sprinkle the flour over the sofrito and stir for 1-2 minutes to cook off the raw taste. This will help thicken the sauce.

  4. Deglaze with red wine
    Pour in the red wine and scrape the bottom of the pan to release all the flavorful bits. Cook for 3-5 minutes to evaporate the alcohol.

  5. Create the sauce
    Add the beef broth, mustard, bay leaf, and rosemary. Stir well.

  6. Cook the pork
    Return the pork to the pan. Cover and simmer on low heat for 45-60 minutes (turn halfway if whole) or 25-30 minutes if using medallions.

  7. Finish the sauce
    Remove the pork and let it rest for 5 minutes before slicing. If the sauce is too thin, increase the heat and reduce until desired thickness.

  8. Serve
    Slice the pork and pour the sauce over it. Serve with mashed potatoes, white rice, or roasted vegetables for a complete and delicious meal.
