1 kg pork loin (whole or medallions)

2 large onions, sliced

3 garlic cloves, chopped

2 cups good quality red wine

1 cup beef broth or water

1 bay leaf

2 tablespoons flour (to thicken the sauce)

Preparation

Sear the pork loin
Season the pork with salt and pepper. Heat olive oil in a large pan or casserole and brown the pork on all sides. Remove and set aside. -
Make the sofrito
In the same pan, add a little more oil if needed and sauté the onions and garlic until soft and translucent. -
Add the flour
Sprinkle the flour over the sofrito and stir for 1-2 minutes to cook off the raw taste. This will help thicken the sauce. -
Deglaze with red wine
Pour in the red wine and scrape the bottom of the pan to release all the flavorful bits. Cook for 3-5 minutes to evaporate the alcohol. -
