Yogurt and Herb Sauce

Ingredients

  • 250 g Greek-style natural yogurt (unsweetened, creamy)

  • 1 small garlic clove, finely minced or grated

  • 1 tablespoon fresh lemon juice

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons fresh parsley, finely chopped

  • 1 tablespoon fresh mint, finely chopped (can substitute cilantro or dill)

  • 1 teaspoon fresh chives, finely chopped (optional)

  • Salt to taste

  • Freshly ground black pepper to taste

Step-by-step preparation

  1. Prepare the ingredients:
    Wash and dry the fresh herbs well. Chop them finely so they blend well into the sauce.
    Peel and finely mince or grate the garlic to avoid strong chunks.

  2. Mix the yogurt:
    In a medium bowl, add the Greek yogurt. Stir in the garlic and lemon juice until well combined.

  3. Add oil and herbs:
    Add the extra virgin olive oil and gently mix until creamy.
    Stir in the parsley, mint, and chives until evenly distributed.

  4. Season:
    Add salt and freshly ground black pepper to taste. Taste and adjust salt or lemon juice for a brighter flavor if desired.

  5. Rest:
    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving. This allows the herbs to infuse into the yogurt.

  • Perfect accompaniment for grilled lamb, baked or grilled chicken.

  • Great with roasted vegetables or as a spread for pita bread.

  • Feel free to swap herbs depending on the season or preference.

  • For a lighter version, use low-fat natural yogurt, though it will be less creamy.
